Serves 4


10oz Pastures of Eden feta cheese

1 cup bright raisins

1 cup dry white wine

Olive oil to taste

1/2 cup roasted pistachios in a frying pan with olive oil

1 branch of thyme




Cook the raisins in white wine with the thyme branch until they swell. Drain and pour over the block of feta cheese. Sprinkle the roasted pistachios and drizzle olive oil generously.

Suitable for serving with rustic bread.
