Raisins and Pistachios with Feta Cheese

7oz Pastures of Eden feta cheese

6oz of dried apricots

6-7 tablespoons of fine olive oil

Thyme leaves

Ground white pepper

1-2 tablespoons of wildflower honey



Finely chop the apricots and mix with the olive oil. Mix with the honey, white pepper and thyme leaves.

Serve the chunk of feta cheese with tapenade used to make it - recommended with warm walnut bread.
